I think you should have your sweet 16 party. It will be one night that you will enjoy and that your parents can't take away from you. It seems like you wouldn't enjoy your trip, so I would save the experience of visiting such an amazing place with people who won't give you a headache. And like you said you only turn 16 once, and Italy isn't going anywhere :)
